Pan Seared Tilapia with Thai Sweet & Sour Veggies


I have some advice for people planning summer vacations with kids who are at that just starting school/preschool age. Don't plan them for early-mid August. You will return home and poof! just like that your summer is over and you are scrambling to get them ready for school. Supplies, back packs, preschool open houses, etc. It is extremely disorienting. But if your kids have been in school for a while, you probably already knew that.


In light of that craziness, for my first posted meal prepared post-vacation, I have a re-post (try saying that 5 times fast!). But it is a well worth it re-post, as it healthy, extremely flavorful, and totally simple to prepare. In the original post I made a Thai Sweet & Sour Pork, but this time around I separately seared some tilapia for the simple reason that I could not find any pork tenderloin in my freezer.

Some other changes: I added corn and zucchini because they are deliciously in season right now. For similar reasons I used both sliced tomatoes and cherry tomatoes. I used vinegar in place of the lime juice and added a bit more ketchup for no real reason other than my mood. And I served the fish alongside the veggies and rice to keep the fish crisp. The meal was a huge hit with the whole family.
